Decided that we needed to cut back on our spending. What does this mean? No more eating out....well, not as much at least. Challenge: try cooking meals for less than five dollars per serving. And the meal has to be tasty and healthy.

There are so many recipes out there but I need ones that are healthy and cheap. Here goes....

Day 1: Cooking for Breakfast
In the Crockpot by 9pm to be ready by 7am
Recipe: Breakfast Casserole
Ingredients:

  1. Potatoes (chopped)
  2. Onion
  3. Bacon (chopped and cooked)
  4. Cheese (leftover shredded and rest of sliced, cut into strings)
  5. Left over Bell Pepper (chopped)
  6. Eggs from family free range chickens (around 12)
  7. Salt, Pepper, Dry Mustard, 1 Cup Milk
Fried Bacon, Cut up Potatoes, Cut up Onion, Cut up Cheese, Cut up Bell Pepper. Layered about half the Potato, Bacon, Onion, Cheese. Then Layered other half of the Potato, Bacon, Onion, Added Bell Pepper, Cheese. Whisked Eggs with Milk, Salt, Pepper, Dry Mustard. Poured Egg mixture all over. Set to cook for 10 hours on Low. 

Total Cost: approx 6.50 for all ingredients. The recipe said 10 servings. I think it is more like 5 servings.
